Justin Girouard, our Featured Chef, has a talent for crafting gourmet dishes and his pecan recipes are no exception. Justin, a Louisiana native, fell into the culinary world quite by accident. While in college, and looking for a way to pay the bills, Justin took a job as a dishwasher at Stella—a late, great restaurant in New Orleans. The fast-paced atmosphere of the kitchen quickly consumed him; before long, the eager learner was under the wing of the Executive Chef. This experience put Justin on pace for a stint at the Abbaye de St. Croix in Salon de Provence, France, before returning to Stella as an Executive Sous Chef until 2008. In 2009, Justin and his wife, Margaret, opened The French Press in the thriving downtown district of Lafayette, Louisiana.
Availability of fresh, local ingredients—such as rich, buttery pecans—serves as inspiration for many of the restaurant’s dishes. Justin’s goal to serve up authentic home-cooked meals, which simultaneously celebrate and reinvent Louisiana’s traditional cuisine, has earned him nominations as a three-time James Beard Semi-Finalist for Best Chef in the South.
